Recipe: The Store Meatloaf (using chili sauce, topped with bacon, 1970's)

THE STORE MEATLOAF

"This is the most popular meatloaf sold at Bert Greene's place, The Store, in Amagansett, Long Island."

1 1/2 lb ground beef chuck*
1/2 lb ground veal*
1/4 lb lean ground pork*
1 tsp salt
1 tsp ground black pepper
1/4 cup finely chopped shallots (or green onions)
2 tbsp chopped fresh parsley
1/2 tsp dried basil, crumbled
1/3 cup packaged dry bread crumbs
1/4 cup chili sauce, divided use
1/2 tsp soy sauce
1 egg, lightly beaten
1/4 cup milk
3 slices bacon

Mix meats, salt, pepper, shallots, parsley, basil, bread crumbs, 2 tablespoons of the chili sauce, soy sauce, egg and milk until well-blended.

Spoon meat mixture into a 5 cup baking dish or a 9x5x3-inch loaf pan. Spread remaining 2 tablespoons chili sauce over top; place bacon on top.

Bake at 400 degrees F for 15 minutes. Lower oven temp to 350 degrees F; bake for 1 hour longer. Serve hot or cold.

*2 1/4 lbs ground meat for meatloaf mixture may be substituted for the beef, veal and pork.

Makes 8 servings
