Recipe(tried): Three days late...SUNDAY DINNER
Misc. AT OUR HOUSE..........
Sunday, a terrible thunderstorm came through right before lunchtime and lightning zapped our computer. My husband and daughter have had to work on the computer so that it could become functional again. I never knew how much I depended on my computer at home until this happened!
I'm going to post the menu for Sunday and include some other recipes that I have tried last week and this week.
Happy Wednesday! For lunch Sunday we had: Annie's Scalloped Potatoes(the recipe is here at TKL), "Stout" Baked Steak, zipper cream peas, CLAUSSEN Pickles, Mama's Angel Biscuits, the recipe is posted here at TKL, sweet tea with lemon, and chocolate marshmallow ice cream.STOUT BAKED STEAK
I thought that stout meant beer, but I didn't have any. I substituted red wine for the beer and it was delicious!
2 lb. London Broil
1 cup stout (I used red wine)
2 T. honey
2 T. red wine vinegar
1 T. Worcestershire Sauce
1 T. A-1 Sauce
2 onions, sliced thinly and separated into rings
1 bell pepper, sliced thinly
2 tsps. minced garlic
Preheat oven to 275. Spray a 9X13" baking dish with PAM. Set aside. Mix the wine, honey, vinegar, Worcestershire Sauce, and A-1 Sauce together. Add onions, garlic, and bell pepper. Put the steak into the baking dish and top with the wine mixture. Cook for 3 hours. The steak will be very tender and the gravy is absolutely wonderful!MANDARIN CHICKEN SALAD
3 cups diced cooked chicken
1/2 cup diced celery
2 T. lemon juice
3/4 cup mayonnaise
1 T. finely chopped onion
1/2 cup diced red bell pepper
1 can (11 oz.) mandarin oranges, drained
1 cup seedless grapes, halved (I used the red grapes)
1 tsp. lemon pepper
1/2 cup chopped pecans, toasted
Mix all of the ingredients together and chill for 2-3 hours. Serve on a bed of lettuce with sliced tomatoes and crackers.HONEY BUN CAKE
1 2-layer pkg. yellow cake mix
1 cup buttermilk
4 eggs
3/4 cup oil
1/2 cup sugar
1/2 cup chopped pecans
3/4 cup packed brown sugar
1/4 cup raisins
4 tsps. cinnamon (I use 2 tsps.)
2 cups confectioners' sugar (I use 1 cup)
1 tsp. vanilla extract
2 T. milk (I use 1 T.)
Combine cake mix, buttermilk, oil, and sugar in mixing bowl; beat for 2 minutes. Spoon into greased 9X13" pan. Mix pecans, brown sugar, raisins, and cinnamon in a bowl. Sprinkle over cake batter. Cut through the cake mixture with a knife to swirl. Bake at 350 until cake tests done. Combine confectioners' sugar, milk, and vanilla in a bowl; mix well. Spread over hot cake.
