Recipe(tried): Tofu mayonnaise dressings

Misc.

This recipe is from the New Age Health Spa cookbook in Neversink, NY. I've tried it and it's very, very good. Also, how about honey mustard dressing? You could make that without any of the aforementioned allergens. Just mix honey, dijon mustard and fresh parsley. Enjoy!
TOFU MAYONNAISE DRESSINGS
6 oz tofu
1/4 cup freshly squeezed lemon juice
2 tablespoons safflower oil
2 tablespoons low sodium tamari (or soy sauce)
dash of pepper
1 teaspoon dijon style mustard
Combine all ingredients in a blender and puree until smooth
VARIATIONS:
Add any of the following ingredients to those listed above before pureeing
1/4 cup diced onion - excellent on vegs. or potatoes in place of sour cream or butter
1/2 teaspoon curry powder & 2 teaspoons minced onion - great on tuna, chicken and egg salad
1 teaspoon grated fresh ginger root -
Fresh dill or any other herb or comb. of fresh herbs
