Recipe: French Fried Eggplant with Savory Cheese Sauce

FRENCH FRIED EGGPLANT

5 small Japanese eggplants (or 1 medium eggplant)
Salt and pepper
2 eggs
1 tablespoon milk
Flour
1 cup fine dry bread crumbs
Oil (for frying)
Savory Cheese Sauce (recipe follows)

Wash eggplants and cut into fingers 1 inch wide and about 3 inches long. Sprinkle lightly with salt and pepper.

Beat eggs with milk in shallow dish.

Dip eggplant in flour, then in egg mixture and coat with crumbs

Fry in deep fat heated to 370 degrees, until golden brown, about 5 minutes. Drain.

Serve with Savory Cheese Sauce.

SAVORY CHEESE SAUCE

2 tablespoons butter or margarine
2 tablespoons flour
1/2 teaspoon salt
1 1/2 cups milk
1 cup shredded process Swiss cheese
1/4 cup grated Parmesan cheese
1 tablespoon minced chives

Melt butter, blend in flour and salt. Add milk and cook, stirring constantly, until sauce thickens Add cheeses. Stir until melted. Stir in chives and serve at once.

Makes 4 servings
