TOMATO GARLIC PASTA SALAD
16 oz penne pasta, uncooked
3 Tbsp olive oil, divided use
8 cloves garlic
1 cup onion, chopped
4 cups tomatoes, peeled and diced
2 bay leaves
2 tsp basil
2 tsp oregano
2 tsp salt
1/2 tsp pepper
4 Tbsp chopped fresh parsley
Cook pasta until done; drain. Transfer pasta to serving bowl and toss with 1 Tbsp olive oil.
Saute onions and garlic in the remaining 2 Tbsp oil until onions become translucent.
Add tomatoes, basil, bay leaves, oregano, pepper and salt to onions and garlic. Cover and simmer 10 minutes. remove bay leaves and add parsley. Cool tomato mixture to room temperature.
Pour tomato mixture over the pasta and toss until well blended.
Makes 8 servings
