PICNIC POTATO SALAD
4 cups water
1 teaspoon salt
4 cups quartered small new red potatoes
1/3 cup sour cream (regular or light)
1/3 cup mayonnaise
1/2 teaspoon dried dill weed
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons chopped fresh parsley
1 tablespoon country-style Dijon mustard
1/2 teaspoon finely chopped fresh garlic
4 slices crisply cooked bacon, crumbled
2 tablespoons sliced 1/8-inch green onion
In 3-quart saucepan bring water and salt to a full boil; add potatoes. Cook over high heat until potatoes are tender (12 to 15 minutes). Rinse under cold water.
In large bowl stir together remaining ingredients except bacon and green onion. Add potatoes; toss to coat. Sprinkle with bacon and green onion.
Makes 4 servings
