Recipe: Tortilla Soup Like El Chico

TORTILLA SOUP LIKE EL CHICO

4 chicken bouillon cubes
4 cups boiling water
2 chicken boneless chicken breasts
1 (6 oz) can of tomato paste (must be tomato paste, not sauce)
5 tablespoons hot sauce, for heat (I use Chalula Hot Sauce)
1 tablespoon commercial chili powder
1 tablespoon dried onion flakes
1 teaspoon lime juice
A touch of Tabasco Chipotle Sauce (optional)
salt to taste
TO SERVE:
tortilla chips
2 medium avocados, peeled and diced

Boil 4 cups water in a saucepan. Dissolve the bouillon cubes in the boiling water. Place the chicken in the boiling chicken broth and simmer until cooked. Remove the chicken from the broth and set aside to cool.

Add the tomato paste, hot sauce, chili powder, onion flakes, lime juice, and Tabasco to the broth and bring to a simmer, while stirring. Test for saltiness and salt to taste.

TO SERVE:
When cooled, tear chicken into pieces. Place broken tortilla chips, diced avocado, and the chicken pieces in a bowl and pour the hot broth mixture over them.
