Recipe: Tuna Chowder for One (StarKist Tuna, 1990)

TUNA CHOWDER FOR ONE

2 tablespoons chopped green onion
1/2 cup diced mixed vegetables
1 tablespoon vegetable oil
1 tablespoon all-purpose flour
1 1/4 cups low-fat milk
1/2 teaspoon fines herbes or dried basil, crushed
1/8 teaspoon paprika
1 (3 1/4 ounce) can (or 1/2 of a 6 ounce can) StarKist Tuna, drained and flaked
Salt and pepper to taste

In a 2-quart saucepan saut onion and mixed vegetables in oil about 3 minutes, or until vegetables are crisp-tender.

Stir in flour until blended. Add milk all at once. Add fines herbes and paprika; cook and stir until mixture thickens and bubbles.

Reduce heat; stir in tuna. Cook for 2 minutes more to heat through. Season to taste with salt and pepper.

Makes 1 serving
