TUNA PASTA ALFREDO WITH VEGETABLES
FOR THE HERBED WHITE SAUCE:
1 1/2 cups 1% milk
1 cup chicken broth
1 1/2 teaspoons garlic, minced
1 bay leaf
1/4 teaspoon thyme
1/8 teaspoon pepper
1 tablespoon margarine
2 tablespoons flour
2 tablespoons fat free parmesan cheese
FOR THE PASTA AND VEGETABLES:
about 3-4 cups uncooked fresh linguine
2 cans (6 oz each) white tuna in water
1 1/2 cups frozen broccoli/carrot vegetable mix
TO MAKE THE HERBED WHITE SAUCE:
Bring water for pasta to a boil. Meanwhile, bring milk, broth, garlic, bay leaf, thyme and pepper to a boil. Remove from heat. Cover and let stand for 15 minutes. Remove bay leaf.
Melt margarine in saucepan. Stir in flour; cook, stirring constantly, until mixture is bubbly; about 1 minute.
Add milk mixture, whisking constantly. Remove from heat. Cover and let stand for 2 minutes.
Return pan to medium high heat and bring to a boil, whisking constantly. Reduce heat to medium low. Simmer, stirring often, until sauce has thickened and is smooth, about 8 to 10 minutes.
TO PREPARE THE PASTA AND VEGETABLES:
While sauce is simmering, cook pasta in boiling water; drain.
Microwave vegetables until just tender.
Chop vegetables into small pieces. Add tuna and vegetables to sauce and mix. Carefully fold in cooked pasta.
Servings: 4
