Recipe(tried): Tuna Pasta and Peppers, Balmoral Pudding, Spiced Pawpaw Fruit Cake

well not long till Xmas....

Another weekend gone!!!!!!!This time next week we should all be tucking into Huge dinners to celebrate !!!!!!. Then its back on the Diet's for January! Here is last nights Supper

Tuna Pasta and Peppers
*******************************
Serves: 4

4 medium peppers(I used Yellow and red)
225g (8oz) wholemeal pasta shapes, such as twists
175g (6oz) small broccoli florets
175g (6oz) small tomatoes
1 x 400g can tuna fish in brine, drained and flaked
2 tbsp lemon juice
1 tsp grated lemon rind
50g (2oz) pitted black olives in brine, drained (optional)
ground black pepper

Preheat the grill to hot. Halve the peppers and remove the seeds and stalk. Place skin side up on the grill rack and cook for 5-6 minutes until blistered. Carefully peel off the skin, then slice into strips. Set aside.

Meanwhile, bring a large saucepan of water to the boil and cook the pasta according to the manufacture's instructions. Drain well and return to the pan. Bring another saucepan of water to the boil and cook the broccoli for 5 minutes until tender. Drain well and mix into the pasta along with the pepper strips.

Meanwhile, halve or quarter the tomatoes depending on their size, and grill for 1-2 minutes until just tender. Carefully mix into the Pasta with the Tuna

I served a green salad with it with a Roasted garlic dressing......

Balmoral Pudding

Stew 6 apples in 1/2 cup water till soft, flavour with grated rind of lemon and juice, add 1 teaspoon of butter and sweeten to taste. Put in a pie dish and cover with cake mixture as follows: 2 tablespoons butter, 2 tablespoons sugar, 3 tablespoons flour, 1 teaspoon baking powder and 1 well beaten egg. Cream butter and sugar, add egg, then flour and baking powder. Bake 1/2 an hour.

Sprinkle with icing sugar before serving.

The following cake I got off the internet ages ago and its very good,lovely and moist......freezes well too!This is going to be our xmas cake as my usual one I make in october did,t materealise!

Spiced Pawpaw Fruit Cake

3 1/2 cups flour
4 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
2 tsp. cinnamon
2 tsp. ginger
1 tsp. nutmeg
1 1/3 cup butter
1 1/3 cup sugar
4 eggs
2 cups pawpaw puree
1 cup raisins
1 1/2 cups chopped nuts
3 cups candied fruits

Sift flour with baking powder, salt, baking soda, and spices. Cream shortening and gradually blend in sugar; beat until light and fluffy. Beat in eggs, one at a time. Add flour mixture alternately with pawpaw puree. Mix raisins, nuts, and fruit, and stir into batter. Turn into 2 greased and floured 9x5x3-inch loaf pans. Bake in a slow oven (300o F) for about 2 hours. Keep a shallow pan of hot water underneath cake throughout baking time. Store cooled cakes in a tightly closed container. Makes about 51/2 pounds of fruit cake.
