I had dinner at the home of a friend last week and she made this. It is delicious and is perfect for this time of year. I am writing this exactly as she wrote it for me.
TOMATO PIE
1 deep dish pie crust (not frozen)
2 to 3 large tomatoes
basil, dried or fresh
salt and pepper
1/2 cup chopped onion
1 1/2 cups shredded sharp cheddar cheese
1/2 cup mozzarella cheese
1/2 cup mayonnaise
Thickly slice tomatoes and blot on paper towel for 5 minutes.
Bake single pie crust for 5 minutes at 400 degrees F. Remove crust from oven and increase oven temperature to 425 degrees F.
Layer tomatoes into pie crust; sprinkle with basil, salt and pepper. Top with onion.
Mix cheeses and mayonnaise together. Spread mixture on pie, patting down to cover pie and seal top.
Bake at 425 degrees F for 30 minutes or until bubbly and brown. Let stand 10 minutes before serving.
