Recipe: Tuna Tomato Bites (using cherry tomatoes)

TUNA TOMATO BITES

2 pint baskets cherry tomatoes
salt
1 (12 oz) can water packed tuna, drained, flaked
2 pkg (3 oz each) cream cheese, softened
2 tbsp milk
1 tbsp copped parsley
1 tsp dill weed
Additional chopped parsley, for garnish, optional

Cut a thin slice from the top of each tomato. With a melon baller or teaspoon, scoop out seeds. Lightly sprinkle insides of tomatoes with salt. Invert onto paper towels. Set aside to drain.

In a bowl, combine tuna, cream cheese, milk, parsley and dill weed. Season with salt to taste.

Using 2 tsp for each, fill each tomato with some tuna mixture. Garnish with additional chopped parsley, if desired. Chill at least 30 minutes.

TIP:
To help tomatoes stand upright, cut a very thin slice from the bottom of each.
