TRADITIONAL TERIYAKI SAUCE
7 tablespoons sake
7 tablespoons mirin cooking wine
7 tablespoons dark soy sauce
1 tablespoon sugar
Combine all ingredients in a small saucepan, set over medium heat, bring to a boil and simmer until the sugar is dissolved. Remove from the heat and either use immediately or cool and store in the refrigerator until ready to use. The sauce will keep almost indefinitely.
Makes about 1 1/2 cups, easily doubled
