Recipe(tried): Turkey Carcass Soup
SoupsThis is a reminder for holiday cooks to get the most out of your cooking! We are told that recycling is good and we do it! Now, before you throw that turkey carcass in the garbage, be sure that it meets a few gallons of hot water first! Make a soup base with the bird! Since the turkey has already been roasted, the broth will be much more flavorful...
TC Soup (Turkey Carcass Soup)
Find a BIG pot and cover the carcass with water. Cook on high heat.
Throw in some chopped onions, garlic, carrots and celery etc...
Spice with black pepper, thyme, bay leaves and sage.
Once the water is boiling, reduce heat to just simmer and skim foam / fat from top. -Do not leave bird on full heat as the fats will turn the broth cloudy.-
Simmer for about 1.5 hours and skim as needed to reduce fat. Add cold water as needed to maintain a covered carcass.
Salt to taste, if desired. (You can add a little chicken bouillon to enhance flavor.
Note: I give no quantities because you are the cook and you know what you like! You can't miss, no matter what...
When finished, strain for broth, or leave in veggies for soup. You will have to strain anyway to remove undesirable turkey parts, bay leaves, etc. Just return the veggies to the pot. This makes a great soup base. I like to freeze it in ice cube trays, then bag the frozen cubes and use them to enhance other dishes.
