Hello Everyone,

I saved my turkey breast bone from the dinner we had last week and made soup out of it and it is fabulous! With it I served Jiffy Corn Bread and Iced Cranberry Tea. A very simple meal yet satisfying...

Turkey Soup
serves 6-8

leftover roasted turkey, bones and skin

8 c. water
2 T. Superior Touch Better Than Bouillion Chicken Base
2 carrots, scraped and sliced
1 c. chopped celery with leaves
1/2 c. chopped onion
1/4 c. chopped fresh parsley
3 T. rice
1/4 t. paprika
1 c. chopped canned tomatoes
1/2 bay leaf
1/2 c. chopped turnipsRemove turkey from bones and put aside. Put bones and skin in a pot. Cover with water and simmer at least 4 hours early in the morning.

Strain thru a colander and skim off excess grease. Measure broth and mix in 2 T. of chicken basae. Add vegetables and remaining ingred. Simmer til veggies are tender. Add enough chopped turkey meat to make a thick soup.

* If you have any leftover turkey gravy and dressing, add to soup. Yummy!!
