Recipe: Val's Hot Stuffed Tomatoes

VAL'S HOT STUFFED TOMATOES

2 large beefsteak tomatoes, washed and cored
4 ounces mild goat cheese
2 cloves garlic, minced
2 teaspoons fresh chopped oregano
1/4 cup bread crumbs
2 cups mesclun greens

Preheat oven to 350 degrees F.

Place whole, cored tomatoes in a shallow pan. Place one slice of goat cheese (about two ounces) in the hollowed out center of each tomato. Sprinkle equal amounts of garlic, oregano and bread crumbs on top of each tomato.

Bake in 350 degree oven for about 5 to 7 minutes or until fork tender. Place pan under broiler for about 1 minute to brown bread crumbs. (Be careful not to overcook tomatoes as they will fall apart.)

Divide mesclun greens between 2 plates and place tomatoes on top of greens. Serve immediately.
