We love Chinese Fried Rice here in Puerto Rico. Here is a version made with vegetables:
4 servings
1 tsp oil
1 chopped onion
2 garlic cloves, crushed
1 tsp ground ginger
1 sliced carrot
7 sliced mushrooms (fresh)
1 egg beaten
Soy Sauce to taste
3 cups cooked white rice
1 cup shredded lettuce
3 sliced green onions
salt and pepper to taste
2 tb chopped fresh cilantrillo (Chinese parsley)
In a skillet, heat the oil and saut in it the onion, crushed garlic, ginger,carrots,and the mushrooms until brilliant in color. In another skillet prepare an omellette with the egg. The egg should look like a pancake. Cut the egg in thin slices. Add the rice to the egg slices and the vegetables and mix carefully. Add the lettuce, green onions and cilantrillo. Mix well and serve hot.
