Recipe: Vegetable-Potato Salad (using frozen hash browns, zucchini, and carrot)

VEGETABLE-POTATO SALAD
2 cups frozen southern-style hashed brown potatoes (8 ounces)
4 cups water
1 medium zucchini, shredded (or 1 12 cup shredded greens)
I medium carrot, shredded
1/4 cup mayonnaise or cream-style salad dressing
1/2 teaspoon salt
Dash of pepper
In saucepan bring to boil potatoes and water. Cover; cook gently 5 minutes. Drain. Rinse under cold water; drain well. Mix well potatoes and remaining ingredients. Chill at least 1 hour.
Makes 4 servings
