SOUTHWESTERN CORNBREAD
1 (12 muffin size) package corn muffin mix
1 (4 ounce) can diced green chilies*
1/2 cup shredded cheese
Line cupcake pans with paper cups or liners and spray each.
Prepare muffin mix as package directs. Stir chilies and cheese into batter. Spoon batter into prepared muffin cups.
Bake as directed on the package.
*You may prefer to use only 1/4 to 1/2 of the green chilies and refrigerate the remainder for another use.
