Recipe(tried): Veggie Alfredo

Hi Linda! Wanted to give you an excellent recipe that I've made many times for Veggie Alfredo! This recipe serves 6 so you'll have to multiply it a few times to serve 50... but I hope it helps!

1 lb. fettuccine
1/2 cup different colored bell peppers
1/2 cup broccoli flowerets
1/2 cup cauliflowerets
1/2 cup peas
1 stick (1/2 cup) butter
8 oz. heavy cream
1 cup parmesan cheese
1/2 cup shredded carrots (for topping)

Cook fettuccine by package directions.

Steam or microwave veggies.

Melt butter in 2 qt. saucepan. When melted add heavy cream and heat to a boil. Add Parmesan cheese and stir well.

Mix all ingredients together in a large sauce pan.

Top with shredded carrots and serve.
