SNOW ROCKET COOKIES
From Sanderson High School, Wake County Public Schools, North Carolina
2 1/2 pounds butter, room temperature
2 1/2 cups sugar
2 1/2 tablespoons plus 1/2 teaspoon vanilla
1 tablespoon salt
10 cups flour
5 cups oatmeal, uncooked
Confectioners' sugar, sifted (for coating)
Cream butter and sugar. Add vanilla and salt, then blend in flour and oatmeal.
Shape dough into 3-inch rockets (or fingers). Place on a greased cookie sheet.
Bake at 350 degrees F for 20 minutes or until lightly browned. Remove and coat cookies with sifted confectioners' sugar while they are hot and again when cooled.
Makes 100 (3-inch) cookies.
