Recipe(tried): Veggie Pasta Shells

Here goes my 2nd attempt to share this Spinach filling for pasta shells for Charlie/Florida.

VEGGIE PASTA SHELLS

Cook & drain according to package directions:
10 Pasta shells

FILLING
2 bunches spinach, Swiss chard, or turnip greens, finely chopped.

Add & mix well:
2 Tbsp grated Parmesean cheese
1 cup cottage cheese 1/2 nutmeg

TOPPING
Prepare:
1 cup chopped onions
2 cups grated Muenster, or Jack cheese

SAUCE
Combine in a bowl:
4 cups tomatoe sauce
2 cloves grlic, minced or crushed'
1/2 tsp basil
1/2 tsp oregano
1/2 tsp marjoram

Filled Pasta shells with filling, and place in a greased 9 x 13 inch baking dish. Sprinkle cheese and onions on top. Pour souce over all. Bake at 350 degrees for 1 hour.

Options: I've decided the next time I make this that I will mix chopped broccoli and spinach for the stuffing, and use a mixture of mazarella and feta cheese. I have also made veggie lasagna with a variety of chopped vegetables; chopped zucchini, yellow squash & or peppers could be used to make this different each time. Enjoy, and have fun trying different fillings.
