Recipe: Vietnamese Green Papaya Salad

VIETNAMESE GREEN PAPAYA SALAD

1 small green or half-ripe papaya
2 small star fruit, 1 cut into julienne strips and 1 sliced crosswise
2 small tomatoes, 1 diced and 1 sliced
FOR THE DRESSING:
1/4 cup fresh lime juice
1 tablespoon fish sauce
1 garlic clove, minced
1 bird or serrano chile, minced
1 shallot, minced
1/4 cup dry-roasted peanuts, chopped
1/4 cup coriander (cilantro) leaves (for garnish)

Peel the papaya, slice lengthwise in half and remove the seeds. Using a coarse grater, grate into a large bowl. Add the julienned star fruit and diced tomato.

In a small bowl, mix together the lime juice, fish sauce, garlic, chile, shallot and peanuts. Pour over the salad and toss. Sprinkle on the coriander leaves.

Mound the salad on a plate and arrange the star fruit and tomato slices around it.

Makes 4 servings
