WALDORF SALAD WITH PEANUT DRESSING
2 cups diced slightly tart apples, unpeeled
1/3 cup raisins
1/2 cup diced celery
1/2 cup chopped salted peanuts
1/4 cup creamy peanut butter
1/4 cup honey
1/4 cup mayonnaise
1 to 2 teaspoon lemon juice (optional, add if using sweeter apples)
Toss together apple, raisins, celery and peanuts in a serving bowl; set aside.
Blend peanut butter, honey, mayonnaise and lemon juice, if using, in a small bowl. Toss with apple mixture. Serve on a bed of lettuce.
