CAPRI SALAD
Chef's tip:
This salad makes an excellent summertime first course or serve it on its own as a light meal.
FOR THE DRESSING:
2 tbsp. balsamic vinegar
8 tbsp. olive oil
1 tbsp. chopped fresh basil
1/2 clove garlic, minced (optional)
Salt and pepper
ADD YOUR CHOICE OF:
calamari, cooked in water and cooled
strips of oven-roasted peppers
shrimp
tuna
olives
toasted pine nuts, etc.
Line a deep bowl with lettuce.
Add your choice of previously mentioned ingredients.
Pour the dressing over the ingredients and combine.
