Recipe: Warm Cheddar-Thyme Vidalia Dip (food processor)

WARM CHEDDAR-THYME VIDALIA DIP

1 large (about 1 pound) Vidalia onion or other sweet onion, finely chopped (3 cups), divided use
6 ounces pepper-Jack cheese, shredded
6 ounces reduced-fat cheddar cheese, shredded
4 ounces light cream cheese, softened
1/2 cup light mayonnaise
1 teaspoon fresh thyme leaves, chopped or 1/4 teaspoon dried thyme

Preheat oven to 375 degrees F.

Place 2 cups onion in a bowl.

Combine the remaining ingredients and the remaining 1 cup onion in food processor. Process until fairly smooth.

Using a spoon, mix into the reserved onion in bowl. Spoon in shallow 6-cup baking dish.

Bake in 375 degree oven 20 minutes. Stir.

Bake 10 minutes longer. Cool slightly before serving.

Serve with crackers or toast.
