Recipe(tried): Watercress Salad with oranges, strawberries, onion and toasted pinenuts

With the didn't-quite-work Jambalaya, I made this water cress, orange, onion, and strawberry salad with pinenuts that was a composite of a couple of recipes. It was pretty good.

Water Cress Salad with oranges, strawberries and pinenuts

1 bunch water cress, stemmed
1 orange, peel and pith removed, quartered lengthwise and sliced crosswise
6-8 strawberries, sliced
sliced red or sweet onion (optional)
1/4 cup pinenuts, toasted

dressing: 1 tablespoon sherry wine vinegar
3 tablespoons extra virgin olive oil
up to 1/2 teaspoon honey, or to taste
salt and pepper. Place sherry wine vinegar in a small bowl and slowly whisk in olive oil. Sweeten to taste with honey and season with salt and pepper.

Toss water cress, oranges, strawberries and onions together, add just enough dressing to coat and top with toasted pinenuts.
