Recipe: Beet Salad

BEET SALAD

1 (3 oz) package lemon jello
1 (15 oz.) can shoestring beets
1/4 cup sugar
1/2 cup cider vinegar
1 heaping tbsp. horseradish

Drain beets and add water to juice to make 1 1/2 cups liquid. Heat liquid and dissolve jello.

Add 1/4 cup sugar and 1/2 cup vinegar and horseradish, stir. Pour liquid over beets and refrigerate to allow to gel.

Servings: 6
