Here are some suggestions for using a whole turkey:
- Roast the turkey as usual. Slice and dice the meat into recipe-size portions and freeze for later use in recipes calling for cooked turkey or chicken.
- Cut the thawed turkey into sections to use in separate recipes. The turkey breast can be sliced into cutlets and/or made into ground turkey for use in recipes calling for ground turkey or chicken. The drumsticks can be roasted or barbecued. The bones can be used for soup, etc. I wouldn't refreeze the portions without cooking them first. Meatballs or meatloaf using the ground turkey will freeze well (you can mix it with ground beef if you want).
