HOMEMADE TURKEY SAUSAGE,ONION & MUSHROOM PIZZA

HOMEMADE TURKEY SAUSAGE, ONION & MUSHROOM PIZZA
makes one pizza, serves two
For the dough:
2 teaspoons yeast
3 cups all-purpose flour
1 teaspoon salt
1 Tablespoon sugar
2 Tablspoons olive oil
1 cup plus 2 Tablespoons water

For the topping:
1 link Sweet Italian Turkey sausage
1/2 medium onion, chopped
8 oz. mushrooms, sliced
2 large garlic cloves, chopped coarsely
scant 1/4 cup tomato sauce
1 cup shredded mozzarella cheese
2 Tablespoons fresh grated Parmesan cheese
black pepper & dried oregano, if desired

For pizza making:
nonstick baking spray
cornmeal for dusting
pizza peel
pizza pan
pizza stone

For dough:layer all dough ingredients in electric breadmaker according to manufacturer's guidelines. Process on dough setting.

Before dough is finished processing, make topping: Remove sausage link from casing and saute with onion in a non-skillet over medium/high heat, breaking up sausage as it cooks. When sausage is almost cooked, add mushrooms & continue sauteing until mushrooms have given up their moisture & are both sausage & mushrooms are cooked. Stir in garlic while mixture is still warm. (You can do this ahead & refrigerate topping mixture until ready to form pizza).
When dough is finished (or like us, you get tired of waiting & are hungry!)pull dough from bread machine & allow to rest 10 minutes on a floured surface. Preheat oven to 450 degrees F. with a pizza stone set on the floor of the oven. Sprinkle cornmeal liberally over pizza peel,(make sure you use enough so pizza does not stick to peel).Cut off 1/4 of the dough, refrigerate or freeze remainder for another day. Spray the back of a pizza pan with non-stick baking spray & gently stretch & press dough to cover back of pan. Invert pizza pan over prepared peel, pulling dough gently from the bottom of pan so it falls onto peel. Top pizza with tomato sauce, sausage mixture & cheeses. Sprinkle with balck pepper & oregano, if desired. Slide peel onto pizza stone in oven giving it a little shake to loosen pizza & slide pizza directly onto stone. Bake pizza for 15 to 20 minutes, watching carefully during last few minutes so it doesn't burn. Shake remaining cornmeal off pizza peel & use peel to remove pizza from oven when it is done. Cut into wedges & enjoy!
