Recipe(tried): White Chocolate Macadamia Nut Cookies

Jenny, This recipe is one I have been making for several years and everyone loves them. It came from a mixture of two recipes, one that was in Chocolatier magazine and one that was in a Better Homes and Gardens Christmas Cookies. I changed a few things and finally settled on this one.

White Chocolate Macadamia Nut

Serving Size : 60

1 cup butter -- softened
1 cup packed brown sugar
1/2 cup granulated sugar
1 teaspoon baking soda
2 large eggs
2 teaspoons vanilla
2 1/2 cups all-purpose flour
1 12 ounce white chocolate chips,only good quality*
1 7 oz. jar macadamia nuts, chopped

Preheat oven to 375 . Cream butter and sugars together at medium speed for 2 to 3 minutes, until light and fluffy. Beat in the egg and vanilla. Reduce speed and beat in the flour and baking soda just until combined. Stir in white chocolate and macadamia nuts. Drop by tablespoonfuls onto ungreased cookie sheet about 2 inches apart. Bake for 8 to 10 minutes. Remove cookies and cool on wire rack.

*Look for chips that contain cocoa butter. Guittard are good and Nestle are not to bad, but hershey white chips are not as creamy.
