Recipe: WW Garden Vegetable Soup (WW points=0)

WW Garden Vegetable Soup (Points=0)

Makes 4 servings (1 cup each)

2/3 cup sliced carrot
1/2 cup diced onion
2 garlic cloves, minced
3 cups of broth (beef, chicken, or vegetable)
1 1/2 cups diced green cabbage
1/2 cup green beans
1 Tbsp tomato paste
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 tsp salt
1/2 cup diced zucchini

In large saucepan, sprayed with nonstick cooking spray, saute carrot, onion, and garlic over low heat until softened, about 5 minutes.

Add broth, cabbage, beans, tomato, paste, basil, oregano, and salt; bring to a boil. Lower heat and simmer, covered, about 15 minutes or until beans are tender.

Stir in zucchini and heat 3-4 minutes. Serve hot.

Commentary: I have slightly improved WW technique. I think the quantities and proportions are a matter of taste. This is also a good starting point for getting creative - or using up whatever you have at the bottom of the fridge. As above its 0 points - as are most vegetables. It's only if you add beans or meat or pasta or barley or rice that you start adding points. Actually any or all of those things make a pretty good soup, but then you have a meal rather than a filler. - Stephen
