This is from the old 5 roses cookbook.
7/8 cup flour
1/4 tsp salt
2 eggs
1 cup milk
1 Tbsp melted butter
Iron , oven glass should be used as these materials
heat well. Be sure the oven is hot before mixing the
popovers. Grease using butter for flavour. Put pans in
oven to heat before preparing batter. Pre heat oven to
450 F
Flour and salt into a mixing bowl. In a separate bowl
beat eggs until thick. then combine with milk. ( a
blender works too)
When thick make a hollow in the centre of the flour and
gradually stir in the egg mixture. ( if you are using the
blender...gradually add in the flour)
Add the melted butter.
Beat hard for 1 minute.
Pour into sizzling hot pans and bake 45 mins starting
at 450F for the first 15 minutes, then decreasing to
350f to finish baking.
Remove from pans as soon as baked and serve at
once.. Serve with maple syrup , strawberries and
whipped cream or you favorite jelly.
note..when we have made them...immediate removal is
the key so they are puffy.....
best of luck
