Here is an Apple cake that I bake for my husband to bring to work and he always gets raves when he does.
YUMMY APPLE CAKE
6 apples - McIntosh (peeled, cored and chopped into chunks)
1 tablespoon cinnamon
5 tablespoons sugar
3 cups flour, sifted
1 tablespoon baking powder
1 teaspoon salt
1/2 cup vegetable oil
1/2 cup applesauce (I use the one with cinnamon)
2 cups sugar
1/4 cup apple juice (can use orange juice if you want)
2 1/2 teaspoons vanilla
4 eggs (beaten)
1 cup walnuts, chopped
1 oz raisins or small box (reconstitute and plump up in 4oz of hot water: this takes about 1/2 hour so leave the time, dump out the water when raisins are plump use only the raisins.)
Preheat oven to 350 degrees F. Grease the loaf pans (One large and one small or two medium).
Toss apples with cinnamon and sugar and set aside.
Stir together flour, baking powder and salt in a large mixing bowl.
In a separate bowl, whisk together oil, apple juice, sugar and vanilla.
Mix wet ingredients into the dry ones. Add eggs. Mix. Add the apple mixture, walnuts and reconstituted raisins. Mix together thoroughly. Scrape down the bowl to ensure all ingredients are incorporated.
Spray Grease the loaf pans with Pam. Pour into one large or two medium loaf pans.
Bake for about 1 hour, or until a tester comes out clean.
