These cute little cupcakes can be made for birthday parties, picnics, or an anytime treat. Kids love these!
LEMON FILLED CUPCAKES
1 package lemon pie filling mix
1 (2-layer-size) box yellow cake mix (any brand)
Confectioners' sugar for dusting
Make the lemon pie filling as directed on package; set aside to cool.
Follow the instructions on the cake mix box, using whatever ingredients that are called for - eggs, oil, etc.
Put paper cups (fancy or plain) into 2 (12 cup each) muffin pans. Pour batter 3/4 full into pans.
Bake according to directions for cupcakes on cake mix box.
When cupcakes are cool; cut a circle out of the center top of cupcake - to make a hat, set the hat aside. Fill the space with lemon pie filling and then replace the hat. Sprinkle tops of cupcakes with confectioners sugar.
