ISO: 40th Surprise Party - Need Help!!!!

Hi, I just found this board and it is really great! I am planning a surprise 40th for my husband and need some help. I am of course having a buffet and I was planning maybe to make: stuffed shells, sausage and peppers, chicken cutlet parm. and another dish (not sure yet what else to make. I am clueless of how much of ingredients I would need for approx. 45 people. Any ideas would really be helpful. Thanks in advance!
