ISO: Also called Patty Pan Squash ?? - lots of recipes under that name

Patty Pan Squash are a light green to almost pale white green squash that are round and in the shape of a flying saucer. They are picked when immature, and can be from 1 inch in diameter on up to 3 inches in diameter. They are a favorite baby vegetable, and can be sometimes found with the squash blossom still intact. The Sunburst is a yellow variety, that is a deep butter yellow. This type of squash is loaded with Vitamin C, and is very low in calories, 25 calories to a cup. They are also an excellent source of vitamin A, and are low in sodium and have good quantities of folic acid.
