Recipe: Baked Summer Squash (re: Starship Squash)

After searching for a long time I found out that starship squash is a summer squash and can be used in any summer squash recipe.

BAKED SUMMER SQUASH

3 cups any summer squash (peeled if desired), cut into strips
2 tablespoons butter
1 teaspoon salt
1/4 teaspoon paprika
A grating of nutmeg or 1 teaspoon fresh lemon thyme
1 teaspoon grated union
1/4 cup milk
bacon, cooked crisp, crumbled (for garnish)

Preheat oven to 350 F. Grease a 1 to 1 1/2 quart baking dish.

Place squash in prepared baking dish. Dot top with butter. Sprinkle with the salt, paprika, and nutmeg or lemon thyme.

Stir the grated onion into the milk and pour over top of squash. Cover the dish.

Bake for 1/2 hour or until tender at 350 F.

Garnish with crisp, crumbled bacon.
