Hi Betsy:

Sounds like you are right, although I think there is some kind of cheese right in the mixture. It is not as thick as the spinach and artichoke but it is dipable (that's a made up word, I'm sure) I don't believe that there is cheese sprinkled on it but I do think there is some kind of cheese in it. It seems to be a very well kept secret but with what you have written here above, I think a person should be able to copy it....I'm surprised that Todd Wilbur has not done it yet....
Hope that's enough to get someone on it, I make up recipes but can't seem to copy some of them that well. I've only had this one a couple of times but my kids rave about it and have had it more than me.
