ISO: Bill Knapp's Bleu Cheese Dressing Recipe

I am originally from the Mid West and was sadly dissappointed when Bill Knapp's chain closed. I have never liked store bought dressing's and used to get blue cheese directly from the restraunt near my home, unfotuantley that's a privledge long past :( I would really love to find the reicipe for their bleu cheese or something similar.
