Recipe: Guilt-Free Linguine Alfredo (using chicken broth and yogurt)

GUILT-FREE LINGUINE ALFREDO

1 (14 1/2 ounce) can chicken broth
1/4 cup all-purpose flour
1/4 teaspoon garlic powder (or 2 garlic cloves), minced
1/4 teaspoon ground black pepper
1/3 cup plain yogurt
6 cups hot cooked linguine (about 12 ounces dry), cooked without salt
6 tablespoons grated Parmesan cheese, divided use
Chopped fresh parsley

In medium saucepan, gradually mix broth into flour, garlic and pepper until smooth. Over medium heat, cook 5 minutes, or until mixture boils and thickens, stirring constantly.

Remove from heat. Stir in yogurt. Toss with pasta and 4 tablespoons cheese. Sprinkle with parsley and remaining cheese.

Makes 6 servings
