ISO: canned fresh tomatoes, green peppers, and onions for stews

I am looking for directions to can tomatoes, green peppers, and onions to use this winter in soups and stews. I know that I just cut the tomatoes into quarters and cut up my peppers and onions, add water to the vegetables in the quart jars, but I am not sure if I just need to add salt and how much, and if I need to add oil or not...I would be so grateful to anyone that can help me as my mil passed away last year and she was the one that knew all these canning tricks.
