ISO: Chocolate snowballs

I am trying to find an OLD FASHIONED POTATO SNOWBALL RECIPE THAT DOES NOT CONTAIN PEANUT BUTTER..
IT IS MADE WITH POTATOES, ICING SUGAR, VANILLA,
then dipped in chocolate & rolled in cocoanut...
I think there is another ingredient to hold them together as the icing sugar added to the potaoes seems to get to runny & will not set???

I'M NOT SURE HOW MUCH OF WHAT TO PUT INTO THE INGREDIENTS ,OR IF THERE IS SOMETHING MORE TO BE ADDED TO MAKE THE SNOWBALLS STAY TOGETHER
before dipping them in chocolate then rolling them into balls...I know you have to put them into the fridge to set before you roll them into the chocolate & then the cocanut...

My sister is getting married & would like to make some for her as they were always her favorite, & would really surprise her...
I thank you for your help with this recipe...
