Recipe: Salsa Rice

SALSA RICE

2 cups raw long-grain rice
2 1/4 cups water
2 cups salsa

Combine rice, water and salsa in a large saucepan. Bring to a boil over medium-high heat, stirring occasionally, then cover with a tight-fitting lid, reduce heat to very low, and simmer for 18 minutes. Turn off burner but let rice sit undisturbed for 10 more minutes.

Stir a bit to fluff the rice, and serve.

Makes about 8 servings
