ISO: Country sausage seasoning

Misc.
I am searching for a tried and proven recipe for
pork, and/or beef sausage. It mainly consists of
red and black pepper, sage, salt, etc.
It will be used for small batches, 10 to 25 pounds.
Any help will be appreciated.
