ISO: Emerald Isle Salad Dressing Recipe

A restaurant called "Kelly O'Brien's" had a salad dressing called Emerald Isle. They also used it as dip for chicken fingers. It is pale yellow and sweet. It is soooo yummy. I just have to find out how to make it!
