ISO: Flash Freeze Nectarines and Pears??

I just bought a wonderful juicy box of nectarines and pears from the orchard growers. How can I successfully flash freeze them for dessert use later? I've read I can slice the nectarines, place on cookie sheet and freeze; then place in freezer bags. Is this right? Without any ascorbic acid? What aboiut pears? Must they be canned or can they be frozen?
Many thanks for your advice and experience.
