FROZEN ENGLISH TOFFEE PIE
3 egg whites, room temperature
1 tsp. vanilla
1/4 tsp salt
1 cup sugar
1/2 cup graham cracker crumbs
1/2 cup coconut
1/2 tsp. baking powder
1 quart of butter brickle or butter toffee ice cream
1/4 cup chopped walnut pieces
Beat egg whites, vanilla and salt until foamy. Gradually add sugar, beating until shiny peaks form.
Combine crumbs, coconut, nuts and baking powder. Fold into egg whites. Spread in well greased and floured 9-inch pie plate, making sides higher than center.
Bake at 350 degrees F for 30 minutes. Cool.
Fill crust with ice cream. Sprinkle candy around edge.
Freeze until ready to serve.
