LEMON-SCENTED SUGAR COOKIES
1/2 cup reduced-calorie margarine, softened
1/4 cup sugar plus 2 tablespoons sugar, divided use
1/4 cup sifted powdered sugar
1 egg white
1/2 teaspoon lemon extract
1/4 teaspoon almond extract
2 1/4 cups all-purpose flour
1 1/2 teaspoons plus 1 tablespoon grated lemon rind, divided use
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/8 teaspoon salt
Beat margarine at medium speed with an electric mixer until creamy; gradually add 1/4 cup sugar and powdered sugar, beating well. Add egg white and flavorings, beating well.
Combine flour, 1 1/2 teaspoons lemon rind, and next 3 ingredients. Gradually add to margarine mixture, beating until blended. Divide dough in half. Shape each half into a ball, and wrap in wax paper. Chill 1 hour.
WHEN READY TO BAKE:
Shape each half into 20 balls. Place on baking sheets coated with cooking spray. Flatten cookies with a fork. Combine the remaining 2 tablespoons sugar and remaining 1 tablespoon lemon rind; sprinkle over cookies.
Bake at 375 degrees F for 8 minutes or until lightly browned. Remove to wire racks to cool.
Store extra cookies in an airtight container.
