ISO: Gingerbread Help!!!!

Over the years my mother and I have tried some gingerbread recipes, all of which are very very hard to manage. I was wondering if anyone had a recipe for easy to handle gingerbread! If not, i was also wondering if anyone had a recipe for a gingerbread that does not rise. The food network had a special on and was talking about all these great recipes without ever giving directions. I would also appreciate it if you can tell me whether or not you have tried it. Thank-you soooooooo much! -Alex-
